This is Uokura's highest-ranking kaiseki meal, where all the edible parts of Echizen crab are cooked in the most optimal way possible.The menu continues with hairy crab, crab roe and salmon roe mixed together, crab sashimi, and shabu-shabu, with each dish being carefully cooked, the temperature and fat content adjusted to create a rich layer of flavor.From crab meat and sea urchin temari sushi, crab miso shabu-shabu, and fried crab claws, each cut of crab is prepared with the most appropriate techniques to turn every last bit into delicious flavor.Finished with crab clay pot rice and miso soup, this is a meal that can be called the "complete" winter meal.
